PROTEOGLYCAN | A JEWEL OF THE SEA

Proteoglycan is a kind of “glycoprotein” consisting of sugar chain bonded to a core protein; it is one of the components that configure the human cartilage and skin. For over thousands of years, “hizu namasu” or the salmon’s head was served to celebrate the New Year as a delicacy in the northern province of Japan, including Hokkaido Prefecture.
